The juiciest chicken burgers!

If you’ve been afraid to try chicken burgers for fear of dry patties, worry no more! You have this juicy, flavor-packed chicken burger! You will love it!

Like salmon burgers, chicken burgers have a bad reputation for being bland and dry. Not here! I have a few tricks to help you get the juiciest and tastiest chicken patties. First, use breadcrumbs (you can use gluten-free if needed) to lock in the moisture, preventing the patties from drying out while they cook. (By the way, this is also my secret to the juiciest Italian chicken meatballs and chicken meatballs.) Greek yogurt adds flavor and extra moisture, while a little drizzle of good olive oil adds rich flavor and healthy fats.

I use my homemade blend of Italian seasonings, which makes this chicken burger recipe a family favorite: I love it for a Sunday BBQ, but it’s just as good for a casual weekday dinner. No grill required!

This recipe is meant to be repeated with all the ingredients I try to keep. Grab some meat, some fixings, and you’re good to go!

For chicken cutlets

  • Minced chicken lean and light, but you can also use beef, lamb or turkey if you prefer.
  • Dried crackers do three things: bind the chicken patties, keep them juicy, and add an extra crispy outer layer. Gluten-free breadcrumbs also work.
  • Greek yogurt adds flavor and richness. I wouldn’t try to substitute plant-based yogurt, but you can leave it out if you’re avoiding dairy.
  • Yellow onion adds sweet and savory depth. Shallots or red onions work in its place.
  • Italian seasoning adds depth of flavor and aromatic quality. Here’s our recipe for homemade Italian seasoning without salt, or you can use the store-bought version.
  • Urfa pepper it’s a smoky Turkish chili. It’s completely optional in this recipe, but I never skip it. It adds something extra that people can definitely point to, but they know they love.
  • Kosher salt and black pepper improve the taste.
  • Olive oil adds flavor and healthy fat to balance the leanness of the meat. Any high-quality extra virgin variety works well, but I especially like something bold and peppery for this recipe, like our Spanish Hadjiblanca.

How to cook hamburgers with chicken

The key to the best chicken burger recipe is a great chicken patty. You can play around with the rest, but you don’t want to skimp on the meatballs: they need a lot of flavor or the stuffing will overwhelm them. Here’s how it’s done:

  • Prepare the mixture for the chicken patties. In a medium bowl, add 1 pound ground chicken, 1/4 cup breadcrumbs, 1 tablespoon Greek yogurt, 1 grated yellow onion, 1 1/2 teaspoons Italian seasoning, and 1/2 teaspoon Urfa Biber (or red pepper flakes). Add a drizzle of olive oil (about 1 tablespoon) and mix well with your hands (use gloves or wash your hands well afterwards).Mix the ingredients for the chicken burgers with a fork just before assembling. Ways to top off your burger

  • Hamburger buns or lettuce wraps for a low carb/gluten option.
  • Homemade garlic aioli brings a bolder, more subtle flavor than store-bought mayo, or Tum (whipped garlic sauce) would also be incredible if you love garlic!
  • Romaine lettuce adds texture and freshness, but any crisp lettuce works well.
  • The tomato adds acidity and freshness to balance the richness of the chicken cutlet.
  • Red onion adds a nice bite raw, but you can also use pickled red onions.
  • Add flavor with your own favorite store-bought pickles or quick-pickled cucumbers.

Methods of mixing

There are endless ways to play with this chicken burger recipe. Here are some ideas.

  • Add creaminess: Crumble the feta into the chicken patty mixture so it’s melted and delicious, then add more feta just before serving.

Make it a meal 

For a side, you can make it classic with fries (these baked sweet potato fries are perfect) or an Italian potato salad.

But I usually go for something lighter with my burgers, like a fresh fruit salad when the berries sing, or a veggie salad like Shopks’ Bulgarian Salad with Roasted Red Peppers and Tomatoes. When tomatoes are in season, no doubt I make my cucumber and tomato salad.

Ingredients

For chicken cutlets
