When I think of Italian cuisine, I first think of flavors made for summer: ripe tomatoes, tender eggplant, fresh basil and good olive oil. Italian recipes prefer simplicity, which makes them perfect for summer, not only because these ingredients grow, but also because we need less to make something delicious with them.

This list is my personal edit of the Italian recipes I turn to most when summer is at its peak. With one exception (I promise!), these recipes don’t require you to spend a lot of time in a hot kitchen, and they taste like food you’d eat on a pizza or patio.

The rest are the heroes of the weekday evening, which will help get dinner on the table in 20 minutes, without sacrificing time outside, in the garden, on the patio for a cocktail hour with friends, in the park or at the pool with the children.

Summer salads and snacks

A love letter from Tuscany to tomatoes in the heat of summer, this bread salad recipe transforms day-old bread into croutons that soak up every drop of ripe tomato juice and a garlicky olive oil dressing until they’re somewhere between crunchy and soft. I like to serve it with swordfish and grilled vegetables and maybe a strawberry granita for dessert. This is something to cook during the height of tomato season; summer in a bowl!

Shrimp scampi

Is there anything more mouth-watering than shrimp? Plump prawns cooked in garlic oil sauce with white wine and lemon. I love them as an appetizer with crusty bread for dipping sauce or as a main dish with grilled asparagus. They also make the perfect Italian aperitif spread paired with prosciutto and melon or tomato bruschetta. Chef’s tip: Do not overcook the shrimp! They are ready when they turn pink and curl into a “C” shape!

Antipasti salad

Hit up a local Italian deli and whip up this no-cook dinner! It’s a chunky ball of cured meats, giardiniera (an Italian pickled vegetable), olives, and a combination of cheeses in a dijon pepper vinaigrette. Add a simple zucchini salad for more veggies. Or if you want to cook something, cannoli is a great option!

Capanat

Caponata is one of Sicily’s most beloved dishes, a sweet and sour aubergine relish with celery and capers that is one of the most complex tasting things you can make with a handful of late summer vegetables. Serve warm, at room temperature, or cold on crusty bread, with grilled chicken or with Insalata di Mare, an Italian seafood salad. Add another Sicilian classic: lemon pudding!

Spaghetti with garlic and oil

This Roman classic, spaghetti tossed with garlic, good olive oil, red pepper flakes and a handful of fresh parsley, couldn’t be simpler, but it’s so, so hearty. The trick is not to rush; took the time to fry the garlic until golden in olive oil, giving it a mild sweetness that makes the whole dish sing. The perfect opportunity to drink an Aperol Spritz!

Pasta with vegetables

It’s technically “spring pasta” in Italian, but I promise you, no one will mind eating this colorful ball of pasta, zucchini, summer squash, carrots, bell peppers, and onions in the summer. Instead of roasting each vegetable, I roast them all in a pan and then combine them with the pasta. The result is a wonderful caramelization, and a nasty one at that!

Mediterranean pasta

If your goal is to simplify your summer meals, bookmark this recipe! Spaghetti tossed in a light garlic lemon olive oil sauce, then loaded with grape tomatoes, pickled artichoke hearts, Kalamata olives, crumbled feta and fresh parsley and basil. Except for the tomatoes, onions, and herbs, everything else comes from a jar, making this pasta dinner a breeze! Top with some light shrimp for more protein!

Italian summer dishes

Chicken thighs

An Italian-American adaptation of Arrosticini, grilled Abruzzo lamb skewers, chicken pieces are marinated, breaded, skewered and grilled. They’re a bit smoky and nicely browned on the outside, but the real finishing touch is the spicy garlic, parmesan and parsley drizzle. To serve these at a casual dinner party, I would start the evening with a limoncello spritz and end it with a delicious green pistachio tiramisu for dessert.

When gorgeous and dense summer eggplants appear on the market, I have this vegetarian casserole on the menu at home. In my version, I skip the thick layer of breadcrumbs and fry the eggplant slices only in beaten egg and flour. I think it really lets the flavors of the eggplant and sweet tomato sauce sing!

A classic caprese salad is an absolute must of summer that I eat as often as I can when the best tomatoes are available. Chicken Scallopini

Thin chicken patties are quickly fried to a golden color and then doused in a bright lemon herb sauce. It’s elegant yet quick, just the kind of easy dinner that summer calls for. Add a handful of baby arugula simply dressed with extra virgin olive oil and balsamic vinegar, or go all out and serve them with grilled artichokes or a lemon fennel parmesan salad. For dessert, you can’t miss this two-ingredient lemon sorbet.
