How to Pack a Picnic Mediterranean Style
There’s something about eating out that makes everything taste better to me! I’m looking forward to a summer full of picnics: outdoor concerts, pool get-togethers and, as long as it’s not too hot, even dinners on the patio. The good news for me is that so many Mediterranean dishes are perfect for a picnic.
Grain salads like tabouli are even better when kept in the fridge (or freezer) for marinating, and Mediterranean dips like baba ganoush and muhammara go great together, and they’re perfect for the snacks I love this time of year.
To make sure everyone stays hydrated, I’ll bring a large jar filled with peach iced tea or watermelon lemonade. For something a little more festive, grab a refreshing summer cocktail. And since pasta salad is a non-negotiable picnic, here are some more Mediterranean pasta salad recipes to inspire you. Here’s everything I’m packing for picnics this summer!
Salads made for travel

Mediterranean three-bean salad
I combine beans, cannellini and chickpeas with capers, crunchy vegetables and fresh herbs. The spicy Dijon vinaigrette cuts through the beans, so it gets better the longer it marinates. Pair it with Smokey Mediterranean Grilled Chicken Thighs with Dill Yogurt Sauce or Grilled Chicken Thighs.

Caprese pasta salad
This pasta salad features the iconic summer trio of sweet tomatoes, creamy mozzarella and fresh basil dressed with extra virgin olive oil and balsamic vinegar. With just eight ingredients, it’s quick to assemble, and the pasta is best when it soaks up the tomato juice. I like to pair it with prosciutto and cantaloupe.

Greek potato salad
No mayo means no worries about bringing potato salad to a picnic on a hot day. Instead, the warm potatoes are infused with the flavors of a bold vinaigrette, Kalamata olives, and lots of fresh dill and parsley. It’s equally good warm, at room temperature, or chilled, making it infinitely versatile for outdoor dining.

Pesto pasta salad
Bright basil pesto is the perfect dressing for a summer salad, and this one packed with zucchini, snap peas and cherry tomatoes packs in all the summer flavor. Since it’s already filled with fresh produce, it doesn’t need much. Top it off with grilled chicken breast for extra protein!

Chickpea salad
This is what I do when a picnic is an impromptu solution. All you need are canned chickpeas, along with cucumber, grape tomatoes, roasted red peppers, and lemon dressing. My only tip for a picnic is to pack the avocado separately and mix it in just before serving, as the avocado doesn’t travel as well as the rest of the salad. It is a good match with Spanakopita or Turkish Borek.
Sandwiches with preparation

Chicken sandwich with antipasta
This sandwich tastes like an entire Italian plate of antipasti sandwiched between two slices of soft ciabatta. It’s lemon chicken with roasted bell peppers, pickled artichokes, olives and fresh mozzarella. Bonus: the only cooked ingredient is chicken, so you can substitute grilled chicken if that’s easier!

Mr. Bagnat
If any recipe on this list was made for picnics, it’s this one. Pan bagnat is a classic Provençal sandwich with canned tuna, hard-boiled eggs, tomatoes, radishes and olives, dressed with a spicy anchovy vinaigrette and stuffed into a baguette. It is traditionally wrapped tightly and left to rest before eating, making it perfect for packing in a picnic basket or beach cooler. Add pink lemonade and you’re good to go!

Sandwich with chickpea salad
Need a vegetarian or vegan picnic main? This chickpea-based tuna salad is one of my favorites. Pack it into a container and use it to fill salad cups, wraps, or sandwiches when you’ve set up the picnic table. Excellent served with spicy quick-pickled red onions or pickled cucumbers.

Cucumber salsa + pita chips
This crisp and refreshing cucumber salsa is completely tomato-free, but has jalapeños and Aleppo peppers for sweetness and pistachios for crunch. It travels easily and makes a fantastic shared snack or side dish with a bag of pita chips for dipping. It’s also one of my favorite toppings for pan-roasted rusks!

Hummus + vegetables
No matter what I pack for a picnic, I always bring at least one of my hummus recipes with me and it is sure to disappear. Serve it with a plate of crunchy vegetables or a skewered Greek salad, and it’s an instant go-to dish.

Watermelon fruit salad
A summer picnic isn’t complete without juicy watermelon on the table, and this melon fruit salad is dressed with honey-lime syrup and toasted pistachios. Melons are naturally hydrating, making them the perfect addition to the outdoors, and thanks to the honey, this recipe serves up a light, no-frills dessert.
